High Protein Warm Salad

We are all busy mums, but if you didn’t plan ahead you can still prepare a delicious meal with a bit of creativity. This one in particular I made based on what I have in the fridge. You can do the same.
It’s a healthy meal that is sure to keep tummies satisfied during the cooler weather. It’s budget friendly and can easily be adapted to suit other meats.
It’s very easy to prepare. It takes me 20 minutes, and I make 4 portions:

 
Ingredients for poaching the protein:
300 grams of rump steak

1 chicken breast
Preparation: 

You can put in the pan any veggies you like. I put in what I have in the fridge:

carrot, celery, onion, parsley, garlic and leaves. Fill with water and let the protein get soft.


For the warm salad:

 

1/2 cup quinoa uncooked

1/2 red capsicum (baked in the oven 200º)

1/2 brown onion sliced

1 carrot shredded

1 full cup green beans (steamed or raw – your choice)

1 cup Chinese broccoli finely cut

Parsley

1/2 lemon

Drizzle extra virgin oil

Salt and pepper
It looks complicated but isn’t really. You can put the protein in the pan and do other jobs in the house while it’s cooking.

When the protein is cooked just shred it with a knife or fork. Mix it with the other ingredients and it’s done.

Cooking doesn’t have to be complicated, fresh ingredients is all that you need.
