Whoever is a mum and has kids at school knows how hard it is to find healthy food for their lunch boxes. I know, nothing beats the vegetables and fruits but it is always good to have something different in their lunch boxes.
I love to share my recipes with you. With a bit of creativity you can make a few things at the weekend to put in the fridge or in the jar like this recipe for cookies.
It is always good to have some good food prepared ahead for the kids during the busy week.
Kids Cookies (lunch box friendly)
1 cup of corn flour
1 1/2 cups oats
1 cup classic corn meal
1 tbs grass feed butter – you can find at health food store (substitution 1 full tbs coconut oil)
2 tbs stevia
1 tsp pure vanilla extract
1 tbs Dark chocolate chips
1 whole egg
1 tsp baking powder
Water or milk (enough to make the dough)
Mix all the dry ingredients.
Make a hole in the middle of the mixture and put the egg in. Start stirring until the mixture is well combined.

You can mix the dark chocolate chips in or make the cookies and squeeze them in. This way you can make all the cookies have the same amount of chocolate chips.
Put in the oven at 180º for 25-30 minutes. Every oven is different so keep an eye on them.
Delicious for lunch boxes!!
