I know it can sometimes be very difficult having a good and healthy breakfast especially if you are a busy mother.

Getting children dressed early in the morning, preparing their breakfast, drinks, lunch boxes and the list it doesn’t stop here.

But if you organise ahead, the follow breakfast idea will save your time.

 

It is another version of my egg roll but I find the muffin easier to prepare.

 

You also can use this as a snack through your day. The recipe makes 4 muffins.

The portion size is 2 (add some veggies and you will have a healthy meal).

 

 

Easy and quickly Breakfast recipe

 

Ingredients:

 

4 whole eggs

1 slice of low fat ham

Parsley

salt & pepper

 

Beat the eggs until fluffy. Add the other ingredients and bake in oven at 180º for about 20-25 minutes or until cooked through. Ovens temperatures vary so it’s always a good idea to keep looking.
