Easter Peanut Butter Surprise

It is nearly Easter and chocolate is everywhere. Here is a healthy treat.

Having regular and balanced meals is important to keep our blood glucose levels stable. Include a source of protein such as meat and eggs and good carbs such as whole grains, vegetables and legumes.

Restricting certain foods or food groups leaves our brain feeling deprived and it rebels against us. A study performed at Hertfordshire University in 2007 found that women who tried to stop thinking about chocolate ended up eating 50% more than those who allowed themselves to think about chocolate. Focus on moderation, allowing room for a few indulgences. Once a week reward yourself with something you love to eat.

But remember you must earn it.

That means you have to work hard before you reward yourself.

Protein Chocolate Peanut butter Surprise

3 big spoons of Peanut butter (cold)

1 cup of oats (blended)

1/4 cup of raw cocoa powder

2 scoops of protein powder (vanilla favour)

1/2 cup of coconut flour

1/4 cup of coconut shredded

2 tbs coconut oil (melted)

1/2 cup of water (maybe less depending on consistency of mix)

2 tbs agave nectar

1 bar 85% dark chocolate melted (for covering the balls)

How to make them:

Before starting you have to leave the peanut butter in the fridge. Make small balls with the refrigerated peanut butter and pop back in the fridge again.

In a bowl, mix all the dry ingredients. Make a hole in the middle of the dry ingredients and put all the wet ingredients in. Start mixing slowly until they all combine and are ready to make the balls.

Use coconut flour on your hands before you start so the balls don’t stick to your hands. A full tsp of the dough can be used to measure  the size of each ball. Make the dough flat and hide a peanut butter ball in the centre before shaping the ball again. When you’re done put them back into the fridge.

Melt the dark chocolate and dip them in.

Let the chocolate set and they’re ready to eat!  It makes 30 balls
